Earthy mushrooms, creamy avocado, zingy semi-dried tomato and crunchy pine nuts make this vegetarian sandwich a meal in itself.
A full flavoured vegetarian sandwich
Ingredients
Serves:
- 400 g Avocado
- 200 g Semi Dried Tomato
- 500 g Rocket
- 100 g Pine Nuts
- 500 g Field Mushroom
- 100 mL Garlic Aioli
- 20 each Helga’s Seeded Bread Slices
- 150 mL Olive Oil
- 40 g Garlic Clove
- 2 g Salt
- 1 g Pepper
- 100 g Meadow Lea Margarine
- 100g g Feta
Method
Step 1
Finely slice your field mushroom and cook with olive oil and garlic in a hot pan. Once cooked, take off the heat but leave in the pan to keep warm. Season with salt and pepper.
Step 2
Deseed Avocado and season with salt and pepper – break up with a fork in a bowl
Step 3
Take your Helga’s slices and spread with Meadow Lea margarine before adding the smashed avocado.
Step 4
Then place your mushrooms, feta and semi dried tomatoes on top of the smashed avocado.
Step 5
Sprinkle with Garlic aioli, pine nuts and add rocket and the sandwich is ready to go.
