Bruschetta on Garlic Bread with Basil Mayonnaise

Bruschetta:
4 La Famiglia Garlic Slices
200g tomatoes (diced)
1 small bunch basil (picked, chiffonade)
30mL extra virgin olive oil
Basil Mayo:
150g Oli & Vine Whole Egg Mayonnaise
1 small garlic clove, minced
10g basil leaves
15mL lemon juice
Method:
1. Bake La Famiglia Garlic Slices as per instructions.
2. In a bowl, combine the diced tomatoes, basil & olive oil.
Season to taste.
3. Basil mayo: blend the Oli & Vine Whole Egg Mayonnaise, garlic,
basil and lemon juice in a food processor until smooth.
4. Top each Garlic Slice with the tomato mixture. Serve with a
drizzle of basil mayo and garnish with extra basil leaves.
